Graham to host regional barbecue competition on downtown square

The city of Graham will play host to one of 11 regional high school barbecue competitions this weekend. The Graham High School Smokin’ Steers BBQ team and four other teams will take over the downtown square Saturday in the first regional competition of the season.

Graham, Central, Rio Vista, Muenster and Humble will all gather Saturday morning in a competition put on with the support of the local community. Students will be competing for scholarship money to a culinary school in Austin as well as a trip to the state competition.

Teams will light their fires at 5 a.m. followed by drawing their selection numbers. Teams will select their meats at 6 a.m. The meats are donated by United Supermarkets. This is done so that each team has the same selection of meats and no unfair advantage on different qualities. Students prepare foods in four categories: brisket, chicken, beans and dessert.

Community members are encouraged to come to the square and watch the competition. Team members are allowed to interact with the public and answer questions. There will be no food from the teams on sale at the competition.
