Joe Scott Elliott

Joe Scott Elliott, 40, of Beeville, Texas, and formerly of Graham, Texas, passed away tragically on Sunday, Sept. 19, 2021.

A celebration of life will be held at 5 p.m. on Saturday, Oct. 2, 2021, at the Republic in Beeville, Texas. Another celebration of life will be held at 3 p.m. on Oct. 9, 2021, at Faith Center Assembly of God in Graham.

Scott was born in Fort Worth, Texas, on Sept. 9, 1981, to Debra Ann Akers and Joe Clyde Elliott. Scott grew up in Graham, Texas, and later moved to Beeville, Texas, where he started Eco Foam Insulation, a successful company he built from the ground up.
On Oct. 10, 2020, Scott married his soul mate Heather O’Neal in Graham, Texas. They resided in Beeville where they grew a wonderful life together.

Scott lived life to the fullest but always made sure his family came first. He loved to have fun in everything he did, hunting, fishing, work and play, he always made sure that people were smiling. He was a man with integrity and kindness, passionate about any endeavor he pursued. Scott set the bar high for anyone and inspired others to be their best self. He loved the Dallas Cowboys, America and leaving Post-It love notes for Heather. His generosity and sense of humor were evident in every part of his life. He was never afraid to stand up for those who needed it. To know him was to love him.  

Scott is survived by daughters, Dylan, Lylah, and Jersey; sons, Grayson and Chase; his wife, Heather (of Beeville); his mother, Debbie Akers (late David Akers); brother, Danny Huckobey (both from Graham); sister, Kelli Huckobey (of Texarkana); grandparents, James and Erma Beckham and nephews, John and Joseph Huckobey (all from Graham); nieces, Kennedy Huckobey (of Sherman) and Carson Huckobey (of Texarkana). Scott is also survived by several uncles, aunts and cousins.

Scott was preceded in death by his father, Joe Clyde Elliott, and his stepfather, David Akers.

Joe is entrusted to Funeraria Del Angel-Everhart, 4901 Everhart Road, Corpus Christi, TX 78411.
